  2. Attn Canadians! I think your food looks lovely, but I must point out that an enchilada by its very nature involves enchilada sauce (en-chile-ada – a tortilla dipped in chile sauce; enfrijolada – a tortilla dipped in bean sauce; entomatada – a tortilla dipped in tomato sauce, etc).

  3. Suebob, I guarantee my mom knows that, having lived in Texas, but we like to bastardize everything here, especially coffee (Tim Horton’s is like drinking charcoal.)

    It’s just shorthand for “stuff in tortilla with salsa on top.” We’re total dorks. But I edited the post… see above!

  4. That’s even better than the steaks I grilled last night (w/homemade marinade. Don’t ask what was in it, ’cause I can’t remember), served with garlic mashed potatoes and grilled yellow and orange bell peppers. But wow, that pork… mmmm.

  5. The ‘enchilada’ looks so good it makes me drool! I’m not surprised that you had to take a bite before you took a picture. I am surprised that you didn’t inhale it and then show us a picture of an empty plate!

    By the way, is your mom so relaxed that she lets you take pictures of food, or is it something you do anyway despite her objections? I love to take pictures of the random, ordinary stuff but I get comments all the time about how that’s inappropriate. I suppose it’s people not understanding the idea behind a blog….post pictures, even of food, to compliment what you right.

    I don’t usually take pictures of food, but a) I had my dad’s camera RIGHT there (whereas all I now have is my phone camera); b) I made half of it, how could she object; and c) my mom loves the blog. Devotedly.

    I probably wouldn’t do it anywhere but here and my house, but it just looked so GOOD.

    The salsa, excellent. The guacamole, most definitely good. The enchilada… hmmm, not convinced. But your mom seems to know how to make “tinga poblana” or a Texan version of it anyways. I agree with Suebob. By the way Suebob, I make amazing enchiladas. My Mom (who is Mexican) gave me her recipe ;-) We can invite Meg and her parents sometime if you want!
